This should give you an excellent idea of what you can enjoy when purchasing a full guide. Here David profiles an outstanding domaine from Les Baux-de-Provence, although as you will see the wines take a more humble classification. 

❁❁ Dom. de Trevallon (Les Baux-de-Provence) 

It remains one of the ludicrous features of the appellation contrôlée regulations that this out and out world class, benchmark Provençale red is now only entitled to IGP status. Theoretically there should be some Grenache planted but the vineyard with north-facing calcareous slopes will not ripen the variety adequately. The mesoclimate here is remarkably cool, much more so than one would imagine.

The resulting red blend of Cabernet and Syrah and the tiny amount of white produced are very impressive and remarkably refined wines. Cask aging of the red is in large older wood and it needs at least 5 years to unfurl and add remarkable complexity. The wine is a classic Provençale example of the blend with floral garrigue scents underpinning the concentrated, dark, cedary fruit. The white is a barrel-fermented blend of Marsanne, Roussanne and Chardonnay, very fine and intense with concentrated, lightly floral, nutty fruit. (DM)
