This is one of the winery profiles for December included in the just published 11th digital edition edition 2020, which should give a small idea of what to look for with the guide, which can be purchased itself or included (virtually free) as part of an annual membership package. Here Jim assesses one of the best producers in the Loire Valley Central Vineyards.

Jonathan Pabiot is the fifth generation of his family to work the vineyards of Pouilly-Fumé. First installed in 2006 Jonathan has taken the family domaine to new heights and is often compared to the other star of Pouilly-Fumé: Benjamin Louis DAGUENEAU, who succeeded his late father – Didier Dagueneau, The Pabiot family first started bottling their wines in 1990 – prior to that they had been members of the Pouilly cooperative. It was in 1990 that Lucien, Jonathan’s grandfather, and Didier, his father, built a winery on their premises above the small vignerons’ hamlet of Les Loges, which is just to the north of the small town of Pouilly-sur-Loire. Jonathan dropped out of his viticultural course at the local college in Cose-sur-Loire. Instead he spent a formative time working at the biodynamic Domaine Léon Barral in Faugères. Jonathan returned in 2006 convinced that organic and biodynamic viticulture was the right way forward. Jonathan started with 2.5 hectares from his father plus a further hectare that he rented. He started the conversion to organic viticulture and managed to overcome his father’s doubts over going organic.

 

Vignoble de Pouilly-Fumé

The whole domaine became certified organic in 2010 and the following year Jonathan and Didier combined their 18 hectares. Now Jonathan runs the estate with the assistance of Nina, his partner, and his father. The domaine is made up of a number of parcels across five communes including a very sandy parcel at Charenton, right at the southern end of the Pouilly-Fumé appellation. The Jonathan Pabiot wines have great purity of fruit. They are good to drink quite young with also having a potential to age well. There is a small quantity of Pouilly-sur-Loire – the Chasselas appellation. Jonathan’s Pouilly-Fumés start with Florilège, which is a blend from different parcels fermented in stainless steel using indigenous yeasts. Then comes Aubaine from a parcel in the commune of Tracy. Next is Prédilection that from vines planted on clay-limestone at Les Loges close to their winery. The range is completed by small production, barrel-fermented Eurythmie. It is aged for six months in wood and bottled unfiltered. (JB)
