Dover Canyon Winery Paso Robles
This small artisan winery was established in 1994 while Dan Panico was still the winemaker at EBERLE. The main emphasis is on bespoke small lot Zinfandel and Syrah from Paso Robles Westside fruit. Small volumes of Rhône whites as well as red blends and some Bordeaux style reds are also produced. Zinfandel comes from a number of sources and the wines are small lot bottlings from either single vineyards or special selections. Both the Old Vine Benito Dusi and Bella Vineyard wines are marked by a real intensity of spicy brambly fruit. The Benito Dusi a touch rounder and fuller, the Bella Vineyard tighter, more minerally. Production is tiny just eight barrels of Benito Dusi and four barrels of the Bella Vineyard emerged from the 2003 vintage and both were on the cusp of four stars. Winemaking for all the reds is the same with vinification in small open top fermenters. Viognier is in a richly textured style with very subtle peachy fruit and and a hint of citrus and has emerged from the Hansen and Chequera vineyards. The wines are bottled without recourse to filtration. (DM)
