Though House of Arras wines are made at HARDYS’ McLaren Vale winery, where Constellation’s sparkling wine supremo Edd Carr is based, the fruit for Constellation’s flagship sparkling brand is rigorously sourced from Tasmania, latterly exclusively from Eastern Tasmania. Carr draws on a range of techniques to forge a supple yet sophisticated range a world away from the fruit-focused sparkling wines of old. All wines feature 100% malolactic fermentation (well balanced by Tasmania’s ample acidity) and an element of oak ageing (whether for the base wine itself or dosage liqueur). Time on lees extends up to 10 years for the remarkably fresh and focused EJ Carr Late Disgorged Chardonnay / Pinot Noir. (SA)
