Top-notch small estate now producing upwards of 15,000 cases annually. McCall is a Burgundy fan and aims to make well structured, ageworthy wines. What is most remarkable about Paringa is not only the quality of the Chardonnay and Pinot Noir but also its Shiraz. Certainly this tends to work best in warmer years but when vintage conditions are benign the wine benefits from an unusually long ripening period. Powerful yet refined, especially the Paringa label which easily soaks up its new oak, it is savoury with dried herbs and pepper.The Peninsula label is from a combination of bought-in fruit and younger Paringa vines. The flagship Paringa Chardonnay and Paringa Pinot Noir and Shiraz are from the best performing vines and offer greater concentration of fruit, complexity and later, well supported by supple acidity and well structured tannins respectively.
